Bed & Breakfast Serves Gluten Free Upon Request at the Whalewalk Inn & Spa

If you go to our recipe's page on our website, there is a recipe for our Bake Omelet. It is our most often asked for recipe by guests. So have made quite a few copies of it. It is also a great recipe to make for our friends who need a gluten free diet. Here is a serving for one -- if you need a break from your regular gluten free diet choices, or are having company and want to have the same main course as your guests. It is so simple and so good. You won't know the difference from the one made with Bisquick.

Serves 1 Bake at 350 for 45 minutes
1 Egg
2 Tablespoons cottage cheese
1/4 cup white cheddar cheese, grated
2 Tablespoons Rice Pancake Mix (my favorite is Pamela's)
1 Tablespoon melted butter
1 Tablespoons milk

Mix all ingredients. Pour into a vegetable sprayed ramekin. Bake and serve.

Had a gluten free guest this past week and she thoroughly enjoyed the muffins. Make them according to package directions, but add the same things as you would for regular muffins. So she had a blueberry muffin, one with shredded cantaloupe and a strawberry banana muffin. Said they were all great and that I should let you know that we do bake and cook gluten free at the Whalewalk Inn, so be sure and let us know of any dietary restrictions that you may have and we will try our best to meet your needs.
